Anisette is a type of liqueur flavoured with aniseed to give it a liquorice taste, along with other herbs to balance out the taste.

It is sweet, and usually clear.

There are many brands. Absinthe was the classic Anisette. Though it's making a comeback, it was largely replaced by Pastis.

Home versions are made from vodka, sugar syrup and anise flavouring (usually from drops of anise oil)

Italian ones are called "anesone." Instead of aniseed, they can be flavoured with Star Anise. They tend to be higher in alcohol than French Anisettes, ranging up to 38 to 45% alcohol.

Cooking Tips for Anisette
