Au Gratin

Au Gratin means garnished with crumbs (usually bread) and grated cheese, then baked or grilled (aka broiled.)

As the mixture sets, a thin crust forms on top and browns.

It can be done at home in an oven or under a grill / broiler. In restaurants, it is done under a salamander.
