Blue Lentils

Blue Lentils are grown in France and Italy. The lentils are small, speckled, with slate or green-blue colouring. They do not need any sorting or soaking before use. They cook very quickly and don't go mooshy when cooked.
The ones grown in Europe are quite expensive. North American grown ones, though still more than regular lentils, have now entered the market at 1/3 the cost (the ones from Le Puy, in the south-west of France are $6.00 US/Pound; North American ones $2.00 US/ Pound. 2004 prices.)
