Brook Trout

Brook Trout are found throughout eastern North America, where they live in streams eating insects, crustaceans, frogs, and small fish.

They have olive-green backs and sides. On their lower sides, they have yellow, red and blue spots.

They grow 10 to 16 inches (25 to 40 cm) long, though they are often just 6 inches (15 cm) long. They will weigh 2 to 6 pounds (1 to 2 3/4 kg) and live up to 4 years in the wild, occasionally 8 years.

Their eggs are laid in fall, buried in gravel. The eggs will hatch in the spring.

Brook Trout have pinkish flesh and considered good eating. They are a favourite of many fishermen.

They are now being farmed in Thailand. Often pan-fried dusted with flour.
