Chum Salmon

Chum are a Pacific salmon. They live in British Columbia, where they inhabit almost 900 streams, as well as in Oregon, and throughout middle and northern Japan.

Chum can live 3 to 5 years and weigh 3 to 8 pounds (1.5 to 3.5 kg.) On average, they are about 2 1/2 feet long (75 cm.)

Their flesh, which can be white or a pale yellow, is mild and the firmest of all salmon; they also have a lower fat content than many other salmon.

Chum are considered less desirable because their flesh doesn't have the colour that consumers associate with salmon.

Language Notes

Called "sake" in Japanese, just like the drink, but pronounced differently.
