Instead of being made with durum wheat semolina, this is made with corn flour. The taste is interesting, and this makes pasta accessible to people with wheat allergies, but it won't cook up as firm as regular pasta.

Cooking Tips for Corn Pasta

Cook for only 4 to 5 minutes. Good in hot dishes, not very good in cold pasta salads.
