Farina Calibrata

Farina Calibrata is an Italian commercial grade of flour made from soft wheat.

A type 00, it is a little more granular than other type 00 flours, and contains little gluten.

This makes it good for pasta and noodles, as the dough doesn't get tough as you work it -- it stays tender.

Substitutes for Farina Calibrata

1/2 type 0; 1/2 semola
