Greater Amberjack

Greater Amberjack is a species of Yellowtail Jack that lives in the Pacific. Compared to its other cousins in the broader Yellowtail Jack family, it has darker skin, leaner flesh, a flatter body and is taller. Its body is a bit longer from the middle to the tail than its cousin Japanese Yellowtail (buri.)
This fish is used for sushi in Japan. For sushi use, they are considered best caught in winter, and best caught when they are 2 1/2 to 3 feet (75 to 90 cm) long. It has cream-coloured flesh.
In North America and Mexico, outside of sushi bars, Greater Amberjack is usually cooked.
In Japan, this fish is now farmed.
