A sugar for preserving which contains citric acid and pectin; good for use with low-pectin fruits.

Some varieties also contain sorbic acid to help act as a preservative for the preserve you are making.

Storage Hints for Jam Sugar

Has a shorter storage life than regular sugar owing to the pectin and citric acid.
