Truffle Fumet

A Truffle Fumet is a concentrated flavouring essence to be used as a flavouring in dishes or sauces.

It's made by taking truffle skins peeled off truffles (the rest of the truffles being used for some other purpose) and simmering the skins in a heavy wine such as Madeira.
