A Vegetable Fumet is a concentrated flavouring essence to be used as a flavouring in dishes or sauces.

To make one, a vegetable stock is first made, commonly made from mixed vegetables such as carrots, celery, leeks and onions.

It is then reduced greatly in volume by simmering and evaporation to concentrate the flavour.
